'Chow mein or Chowmein is a popular kolkata street food recipe. In this Bengali style chowmein recipe I have used egg noodles and has also added scrambled eggs into this chowmein recipe as is done by most kolkata street food vendors. This Bengali chowmein recipe has its Indian touch where one adds green chilli sauce which normally is not used in the Chinese version making this kolkata style chowmein a blend of Indo-Chinese cuisine. Hope you all like this Kolkata chow mein recipe. NOTE: 1) The important thing is to boil the noodles for about a minute or two till they are a little chewy, follow instructions on the packaging. 2) No need to add oil in water while boiling but can add a bit of salt in water, 3) I have not added salt while boiling the noodles as the noodles I have used already contains salt and I don\'t want to make them very salty. 4) Rub oil after straining the water when the noodles have boiled and thereafter washing it with cold water to stop carry over cooking and then mixing oil and keeping the noodles aside so that they become fluffy and are not sticky. IMPORTANT: ---------- A) The quantity of vegetables will increase or decrease according to the amount of chowmein you are making. B) Remember that most sauces contain salt so its very important to check for salt before adding it. C) Moreover, you can also add Garam masala powder but I don\'t like the flavor of it in this chowmein recipe and therefore I have not used it. d) Always stir-fry noodles on high flame which gives chowmein the crunchy bite. e) Using sesame oil is highly recommended as it gives a good flavor but as most homes normally have refined oil, I have also made this recipe in refined oil.
